Alaska pacific cod head —– 1
Dried red pepper —– 20g
Scallion in 1-inch pieces—– 20g
Garlic —- 50g
Ginger —- 20g
Light Soy sauce —- 15ml
Oyster sauce —- 30ml
Sugar —- 20g

1. Chop Alaska pacific cod head into big pieces.
2. Warm the oil in the wok; stir fry scallions with garlic, ginger and dried red pepper; add sugar, soybean sauce and oyster sauce; add chopped Alaska pacific cod head and keep stir-frying.
3. Simmer all the ingredients in a casserole for 20 minutes
